I'd avoid cheap as nori can have a chance of heavy metals if not of quality. I like this organic brand but I use the stuff for stocks, not sushi. My local Trappers Sushi has an amazing roll called the Vader, which is awesome. They also offer a Skywalker roll (since there is a town called Vader, WA, you can go with the geography theme or the Star Wars theme).

It's all about taste, the price, and how adventurous you are. Tuna, snapper, uni, unagi, squid. The taste I can't help with as I never eat much seafood outside occasional crustaceans. I'm just a knowledgeable otaku.

You could make your sushi with cat food. It has the right consistency, and lots of different flavors. You would still be eating raw fish.
