Smoked turkey on my Weber
Cornbread dressing
Mashed
Smoky gravy
Scalloped oysters
Puree of butternut squash
Candied yams
Roasted brussels sprouts
Cranberries

Apple crisp w vanilla ice cream

We did it today as #1 child and her family were here.
We will eat it for a week, likely will freeze some of the turkey, it was labelled as 18lb though of course a lot of that is water....Brother in Corpus is trying to talk me into getting a non salt water injected turkey next year and brining it......says I will not be sorry.

It was at my brothers years ago that I had my one and only deep fried turkey.....I got the idea that it was a Texas thing.

I liked it.

I always brine...you would not be sorry... What a happy, delicious weekend!!!

spatchcock it as well - so the white meat doesn't dry out before the dark meat is done
That's a good idea...I was actually going to attempt a Turducken... I found a four and a half pound duck in the freezer...;) Have you ever done that?

no - I find that to be a gimmick

meat is hard to cook perfect on a good day - this just needlessly obfuscates things

I know... I just thought it would be fun to try...lol... I've got the other turkeys and hams Down to a science...so i figured I'd just play around... that duck has been in the freezer for a while... So if it
doesn't come out well... I don't have very much invested... Maybe fifteen dollars and some time... Any?
Other suggestions for a 4 and a 1/2 pound very frozen duck? Confit?

I'm pretty excited for the holidays this year. my kids are out of college - and have no financial reason to spend multiple days with me, but they do for the holidays and it makes me feel awesome!

my mom had to come live with me as well - as she is having just enough memory issues to need assistance - but not enough where she agrees she needs the help - and the last few weeks have been an experience but we are finally settling in a groove
