Oh, sweet. The one in Utah, right?. Yeah man, I always wanted to do a multi day trip on the green river. That looks awesome. There's an old kayaker's legend that somebody released a crocodile in the green river years ago, and it's still living out there. Yikes!

thats awesome. key largo looks magnificent. i've never kayaked in tropical weather, i've outriggered in the islands, not the same as kayak, you have guys to team with.....this one time.....crossing a fast moving inlet on an island... i was rear position and it was fucking tough...we had no clue what we were doing and i steered and paddled like hell. when we made to the other side, i simply couldn't believe it.

needless to say, we took a taxi home.
 
We blacken crocks, taste like chicken. I was kayaking in cane bayou chasing a baby gator mommy about 6 ft long pops up a foot behind my kayak, my wife nearly shit I quit chasing.

Yeah the steve Irwin only takes hotties. I don't kill gators, lots of cajuns do. I haven't been back to cane bayou after seeing the 6 footer right on my hobie's tail rudder.

I'm compromizing. I reduce the volume of red meat but I buy higher quality cuts and cook it in a stir fry with lots of vegies or I buy tough cuts, braise them for hours until tender, then I refrigerate and scrape all the congealed fat off the top to make it heart healthy. I then serve that over rice or noodles with a big salad of mixed greens. YUM!

I like beef ox tails and short ribs in particular. Pork, beef, lamb and veal shanks are great for braizing too (Oso Buco style). I love the marrow. It looks like a big gob of fat but it's not, it's denatured protein and it taste sooooo good. :)
