There is a large variety of seasoning mixes used.

Usually, the spice on the shells is thick enough you can pinch it off with your fingers. You can lick them if there's not enough spice. No rule against it. Any food you have to use a hammer to eat, you are allowed to be messy.

The meat is sweet and does not really absorb the spices. Which is why spice fiends will pinch it off the shell.
