That's usually decided by the person that raised the person that believes in a "one true god". I've rarely seen someone convert from one belief system to another. It does happen, I've seen Christian to Muslim or even Jew, I've seen Jew to Christian... I've even seen Muslim to Christian. But all of these are rare. Almost everyone that believes in a Being that Created the Universe believes in whatever version they were raised to believe.

Judaism doesn't have a concept of hell as a place of eternal torment like some other religions, it does have a concept of Gehenna, which is more akin to a temporary purgatory for purification. The focus in Judaism is more on this life and doing good deeds, rather than dwelling on the afterlife or eternal punishment.
