They will if the pay is good. Most of these jobs are done by illegals because the employers make bank while paying a pittance to their near captive workers. A restaurant chain here in Arizona was busted about 6 months ago for it. They were firing their American workers, replacing them with illegals that they trafficked from Mexico and kept in stash houses as near slaves paying them a fraction--well below minimum wage--of what they would have to pay Americans, and weren't paying taxes, social security, or anything else on the illegal's wages.

That and the illegals often do shitty work by comparison.
