how can someone that comes from somewhere that makes 1/100 what we do come up with such good falsified documents our business owners just cant tell? Seriously? They know.

I don't know one way or the other. I've never had to look at documents to check if they are legal or not so I don't know how easy it is to fool e-verify. I don't see how people in Mexico having less money means they can't have good fake documents.
