The only one that Israel outright started was the preemptive '67 "Six day war." There, they simply got started on a war about 48 hours ahead of the Arabs starting it. They didn't start the 48 or 56 wars, nor did they start ones after the 73 war.

In 1948, the state of Israel was formed on 14 May at midnight with the Israeli declaration of independence and the British leaving under the Balfour Treaty. Less than 12 hours later, the various neighboring Arab states invaded and told Palestinians to flee (the Nakba). Yes, the Arab states broadcast on radio that the Palestinians should flee so they wouldn't be caught in the destruction of the Israeli state.

In 1956 (the Suez War), Egypt unilaterally closed the Suez Canal to all foreign traffic along with the Straights of Tiran. That blockaded the Gulf of Aqaba and the Israeli port of Eilat. Israel took part only after Britain and France attacked Egypt and invaded with the intent of opening the Suez Canal while Israel looked to open the Gulf of Aqaba. In other words, Egypt precipitated that war by its actions which were internationally hostile.

In 1967 (the Six-day War), Syria had been shelling Israel off and on for weeks and there were several air battles over the Golan heights. Egypt and Syria mobilized for war and were massing troops on Israel's borders. Israel preempted their offensive, crushing both armies and took the Golan Heights, Sinai Peninsula and a portion of Egypt to the West of the Suez Canal.

With the 1973 Yom Kippur war, the Arabs launched a surprise attack on Israel and after early success had their armies pummeled into ineffectiveness. Israel negotiated a permanent peace with Egypt returning most of the Sinai to that nation as part of the agreement. Syria wouldn't negotiate.

The 1982 and 2006 wars in Lebanon were precipitated by actions by Hezbollah, the PLO, and associated groups mounting attacks on Israel.
