I don't think there is anyone that has a degree in reading someones thoughts. I do agree we can read body language, but then we must filter that & IMHO that is where the problem begins...

We can be totally wrong, even if you are good @ it..

As the example you mentioned..

You read him as being nervous about all the Latinos in the store...

Did you analyze that~consider other possibilities??

A few observations, in ignorance of other circumstance etc of course:

Like did he come to a store in a Latino neighborhood & become surprised to find Latinos in the store?? Kind of a flag there for me..

Did he come to shoplift & all these ppl are in his way.

Rob the store & these ppl in his way..

Just got into it in the parking lot w/ his wife or gf..

Has to be @ his gramma's b-day party in ten mins & he doesn't know what to buy..

I could think of lots of things...... Could you??
