The word 'chink' may have one of several meanings.

The word first appeared in the English lexicon around 1530's. This use meant a crack or fissure (a chink in someone's armor). It also refers to the mud used to fill cracks and fissures between logs in a log building or cabin.

Around the 1580's, this word was also used to refer to a metallic sound (the chink of coins).

Around the 1900's, this word was also a derogatory word for one of oriental descent, probably referring to the eye shape as the fissure. It particularly was used in a derogatory manner against the Chinese workers in the United States and Britain.

As far as a 'slant on it', that's another way to describe the folded skin around the eye of those of oriental descent.
