First thing I do is eat the heart. Backstraps and hindquarters are saved for a special occasion.Tenderloins. I'd put 30 mins of smoke on 'em, then 10-12 minutes of preheated hot as the oven gets with bacon wrapped all around 'em naked. Then shut the oven off and wait for 2 hrs. One could put the bacon already on 'em in the smoker, too.
