How do you know the birds around the sick one aren't infected?
Separate a sick bird from the rest of the flock.
The rational reason is that, by the time the bird/chicken is found to be sick, there is a high likelihood that is has already spread H5N1 to birds around it, but those birds aren't showing symptoms, yet.
How do you know YOU aren't infected???
So, how do you actually bring an end to the spread if you're only responding by removing obviously sick chickens?

There are thousands and potentially millions of different strains of flu viruses. You would need immunity for every one of those viruses and any possible mutations that might become deadly.
