Some of the best fish dishes I've ever tasted have been Sushi. I know a Sushi joint my wife used to work at in Morresville, NC. They had a cooked sushi roll called "Red Snapper Nirvana", it was basically a Cali roll with thin slices of Red Snapper on top with some spritz of a ginger sauce and a shrimp sauce then placed on a broiler plate and broiled till the Red Snapper was cooked and the sauce started to carmelize. It was to die for!!
Every once in a while they'll appear in the sea food section of the local grocery and my wife will wipe them out. She has literally purchased their entire inventory (5 to 10 lbs). I like doing boils with sweet corn, sausage, potatoes but I also like crawfish etouffee.
