Okay.. Thanks... I'm going to pass if I can't get them fresh.. Too delicate to be frozen properly in my humble opinion .. Especially frozen for a good length of time....But I know a lot of people enjoy them that way so... Since obviously that's the easiest way to get them... again...Thanks for taking the time to reply. I think a lot of people do the breading/frying for such a small fish. They really are delicious. If you choose to just leave the bones in, then you will be pulling them from your teeth/throat and gums unless you choose to prepare them differently. It's also possible to bone the fresh ones but that will take hours and a very sharp knife. I do trout that way, but a large fish is much easier to do.

If you opt for a different cooking method to breading, you can certainly pull the meat from the bones as you eat them.

They are delicious....i've only had them fresh...cleaned them thoroughly but did not bone them... no problem with the bones at all... fried them... I'm still going to skip the frozen...lol

The only way to get fresh smelt is to fish for them. How many days do you believe it takes to get from the lake to the fish store?

And you're happy with frozen so all is well... And as you know, icing fish and shipping them is not the same as deep freezing them in a bag for months...;)

Mom used to get them from the kosher fish store , memories ... fish store next to the kosher butcher next to the appetizing store (for knishes, Kisha etc) next to the bakery.

People shopped daily as was the custom like Europe . Only time the small A an P was for canned goods
My grandparents had a kosher butcher shop in the Bronx. Later on, every Friday my grandmother would go to the kosher butcher and pick a live chicken to be butchered.

It is much fresher to buy flash frozen fish that are processed on the boat as soon as they are caught. I rarely buy fish. Mostly salmon when I don't have time to fish.

We can get all we need in the summer from friends at the lake... buying local, fish or meat, is the best..
I very rarely buy either from any grocery store....though I do occasionally break that rule if there's a very good sale, and I can get it cut when I'm there... But we've got too many other good options here, so...

So...everything is relative. For most of my life the fish I ate was swimming a few hours before. Days old fish is not 'fresh' fish. I don't eat much out of the ocean, as it's not healthy. NOBODY should be eating any tilapia that comes from China or India.

Well, fresh caught fish and iced is the freshest most of us can get...;) I'm ok with that...
You're lucky to be able to fish...and know how to properly process it...Good luck in the next couple of months...it sure is cold enough...
But no frozen smelt...no...no...no...
( And Why would anyone want to eat tilapia anyway? lol)
