In the event of a shoot out between two armed people...both can now claim self defense right?

A person who was the initial aggressor cannot claim self-defense as a justification unless they abandon the combat or the other party has responded with excessive force.

Depends I'd guess. If it was a mutually agreed upon shootout, the survivor could be liable for any innocent bystanders hit by the decedent. Assuming anyone lives.
 
You can go into a bar and start a fight. Then kill that person in self defense.

If you committed a criminal act you first have to successfully retreat to the wall. Meaning, you have to run away until you're caught, cornered, or know you're going to be forced to use lethal force, such as: three people chasing you thinking you have a knife with the reassurance that they too have knives. "He has a knife!" "So what, we have knives also".

Side note, even a shot through both lungs and two ventricles takes 30 seconds to kill you. That's a whole lot of time for someone with a knife to cut you up.

In close quarters, a knife is better than a gun.

And there's usually stipulation in case law where it comes to altered states of mind. Bars are where you go to do that kind of thing, sooooo.
