The cop could testify to what he saw. He shot that kid, then realized the trouble he was in and attempted to make it look like self defense.

Because witness accounts show the kid pounding Zimmerman and Zimmerman screaming for help. The witness then told him (the kid) to stop and that he was going to call 9-1-1. It isn't rocket science, nor is it hearsay. That is what a witness saw.
Was that the young kid or the witness that changed their story?

Not really, direct statements from a witness who saw Zimmerman getting his butt kicked and shouting for help isn't hearsay.
it is hearsay and it is allowed in court because of an exception to the hearsay rule.
