Jade's Recipe Exchange.

Interesting. Uses chuck roast instead of ground beef. Thanks!

Three CUPS of croutons? Have you made this recipe yet?
No, I haven't, but it sounds good. It's from one of my favorite chefs, Alton Brown. It's spicy, though, and from what I know, I'm sure you'd go toe to toe with Mom on spice tolerance. I thought I remembered the hubby likes spice, though.

Your memory is correct. I have no tolerance for spicy stuff but Mr. Owl loves it. When I make meatloaf, I divide it in two and bake them in small foil loaf pans. His gets dehydrated onions, jalapenos, and is topped with chili powder-impregnated catsup. Mine has real onions, green peppers, and basil-covered catsup topping. He'll eat it but it's not one of his favorites. Bet he'll like the one with horseradish and mustard though!

That's one reason the recipes all have a filler -- bread crumbs, croutons, etc. It extends the number of servings. It also holds it together. I use oatmeal soaked in a bit of milk.
Mine sometimes come out good and sometimes falls apart,
and when the latter happens, I never know what went wrong.

In any case, it's not one of the Gestapo's favorites,
but the Avatar seems to think it's OK.

We are having a dish I learned at Girl Scout Camp.

Set oven 350

Cut a section is foil large enough to accommodate hamburger patty

1 potato per person, thinly sliced
1 hamburger, or meat, non meat of your choice patty made to your preference, high fat content make better sauce, but not too high!
1 Carrot(s), or more, sliced to your preference.
1/4 onion, thin sliced ( more to your preference)
Catsup
Salt and pepper each layer to taste.

Build dinner on foil piece
Potatoes on bottom, onions on top of potatoes, carrot(s) on top of onions, patty on top of everything. Catsup slathered on top.

Take ends of foil and tie in the form of a napsack.

Cook in oven till hamburger is done to your specs. If you like it rare, slice your veggies super thin.

My Girl Scout leader called this a Hobo Dinner.

We were at the Girl Scout Log cabin for an overnight, the first time I had them. They can also be cooked over a camp fire using coal.
