The rules are the same. Most restaurants have a person that seats you. The only reason I have ever been denied service was because the restaurant was closing, but in theory restaurants must give their permission for you to sit there.
What on earth caused you to not be able to eat in a sit down restaurant for 15 years? Did you not understand the sitting etiquette, and demand a seat?

Never even thought about it. If you walk into any privately owned establishment that wants your business, permission to enter is implied.
Where are you getting these ideas from? I've never been refused service anywhere for any reason. Restaurants are expensive, they take a long time to prepare a meal, and it might not be done the way you like it, and mainly, I like to cook, and I can probably do it faster and cheaper than any restaurant.
If it helps, now that I'm fully retired, I'm planning lots of 50-to-150-mile motorcycle trips, during which I will more than likely partake of the delights offered by any greasy spoon diner I find. What's a vacation for?
