I’m mildly curious though . What do you think is the temperature of the earth? They use a thermometer to measure those locations.
By your reasoning doctors can't measure the temperature of a human either. They only measure it in one spot and then go from there.
But to the larger point: this is something in science called SAMPLING. It is how 99.99999999999999999...9% of all the science you know has been created. It required sampling at some point to make the measurement. It is unlikely that every single item in a given population is measured. This is how science works.
