Sea salt, mixed with ground up bits of truffles. It's how they use the smaller truffles, or less presentable ones. It has a very rich earthy flavor.

Thanks. I knew nothing about it. I have pink Himalayan salt and regular sea salt but that's about it. Do you use it regularly or only on special dishes?

Steak, soup, and fries mostly, but it works anywhere you want earthy flavor.
