I use diced carrots, onions, celery... saute them first in some butter till the onions are translucent. You can add peas, green beans, corn, whatever your family likes. I make a "gravy" for it with chicken broth, poultry seasoning or sage, thicken with flour or corn starch. put all that in your casserole dish, add the turkey (I guess you're using leftover cooked turkey?), then top with the mashed potatoes. Brush a bit of melted butter or margarine (or use butter flavored cooking spray for less fat) over the top of the potatoes. Bake for ~ an hour at 350F. Let it stand 10 minutes, then serve. my mother in law gave me this basic reciepe

we call it meat potatoes and cheese


brown hamburger meat with some onions, garlic, salt and pepper to taste in a massive frying pan


have some baked potatoes ready and peel and chop them in cubes.


have some sharp chedder grated and ready to go.


combine in large frying pan


Its so simple and is like a deconstructed hambuger and fries.


the original given to me was actaully nothing but meat, potatoes and cheese with salt and pepper.

I've come up with something new!
Take two slices of Wonder Bread,on one slice put a generous amount of Peter Pan PB,on the other slice,put Welch's grape jelly,put together as a sandwich! fantastic!
 
most people I have talked to never thought of this meal even as basic as it is


it is hard core simple comfort food
 
Cottage pie is made with beef, shepherd's pie with lamb. Not sure what the hell you call it when made from turkey, maybe pilgrim's pie?
Mayan Pie would probably be better. I believe it was the Mayan's who domesticated Turkey. That would be good though...replace the gravy with mole sauce.

but siracha and honey in equal parts and some butter and lime juice on chicken is yummy

Pot luck with work colleagues last night. I made vinaigrette (Russian beet root salad), and most people had seconds!

My buddy made Bacon-Wrapped Stuffed Figs, which I have never had before....but they are incredible!!

Figs remind me of my deceased father, because one of his snacks of choice was fig newtons. On another note, you should try medjool dates. They're not cheap, but they are really good, and would be a great hiking snack.
